How to make cracked wheat upma?
How To Make Vegetarian Cracked Wheat Pilaf / Upma?
Ingredients (Makes 4 servings):
- 1 cup coarse cracked wheat
- 1 large potato, peeled and diced
- 1 medium onion diced
- ¼ cup peanuts (optional)
- 2 dry red chillies (optional)
- ½ cup frozen corn
- ½ cup frozen peas
- 4-5 curry leaves
- 2 tsp. mustard seeds
- 2 tbsp canola oil
- Salt to taste
Preparation:
- Cracked wheat:
- Dry roast cracked wheat in a pan over medium heat, stirring continuously. It should emit a fragrance, but not turn dark brown.
- Combine 2 cups water and the roasted cracked wheat in a pressure cooker, and cook for 4 whistles.
- Remove pressure cooker from the flame, and let pressure reduce naturally
- Open, and fluff cracked wheat with a fork
- Vegetables:
- Heat oil in a pan, then add mustard seeds and let splutter
- Add red curry leaves, chillies and peanuts (if using) and saute till peanuts turn light brown
- Add onions and sauté till transparent
- Add potatoes, and cook covered on low flame, until almost done
- Add peas and corn and cook covered for 4-5 minutes or until done
- Add cracked wheat and salt and mix thoroughly.
Tips:
- Serve hot with yogurt raita. Use Spicy Lahsun (Garlic) chutney and/or Dhaniya (coriander) chutney on the side.
